Bob,I make jerky myself. I get london broil when it's on sale. If I have some venison I use that. I just about freeze the broil then cut it, makes it easier to cut into strips.
My marinate is just a mess of stuff that I throw in, starting with bulls eye marinate. Liquid smoke,lemon pepper, some hot sauce , Worcestershire sauce, lemon juice and maybe paprika. Don't measure anything just gotta feel it. Let it set in a couple of baggies overnite and start them the next morning.
Most of the time I use a dehydrator. My smoker is at the trailer. If I make it up there I use it with hickory chips.
