Ok, this past weekend I had a campfire in the patio firepit, and marinated and grilled some shrimp.

Here is the recipe I use:

3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
2 pounds shrimp, peeled and deveined

Mix together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper (eliminate if you dont like spicy). Add shrimp to the bowl, and stir until they are all pretty well coated. Refrigerate for an hour or so, stirring a couple of times.

Get your grill going at about medium-high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head.

Cook shrimp on preheated grill for 3-4 minutes per side, or until opaque in color. Do not overcook, they will be dried out, DH will yell at you.

Here is the product in action. Note, the clear/white shrimp are ones that I did not put the marinade on, they just had garlic on them, the wife likes variety.
