Default Crockpot Chili Casserole - Easy

I normally bake this at home but adapted it for the crockpot when camping and it's a big hit.

1 box stuffing mix
1 can of chili
1 can cream corn
1 bag shredded cheese
1 pound browned ground beef

Note: I double the recipe for my family. You can also use 2 or three extra burgers from the grill and crumble them in instead of the ground beef.

Pour stuffing mix in bottom and soak with water. (You want it to be very moist, but not soupy.) Add in all other ingredients and stir. Cook on high for about an hour or until cheese melts.

Will keep for three days when refrigerated and is an easy to reheat snack or side dish. It's also a kid favorite.

This sounds great, but we make what we call "camp chili," in our crockpot when we go away, starting it from scratch, meaning plum tomatoes, no cans for us!

I think a crockpot is a necessity for a camping trip!
